Recipe For Glazed Lemon Bars
As the weather starts to feel more like Spring, I have been craving more fruity sweets and therefore have been on the hunt to try and find the perfect recipe for these cravings. I have found a recipe for lemon bars that will make you feel like you’re laying under a bug- free tree in the middle summer with a slight breeze.
The entire process will take around 30 minutes including 15 minutes of prep time and 12 minutes of cooking depending on your oven and will make 20 cookies for you, yourself, and you to enjoy.
For the cookie ingredients you will need:
2 cups of all purpose flour
2 teaspoons of baking powder
1 teaspoon of fine salt
10 tablespoons of unsalted butter
1 cup of granulated sugar
1 tablespoons of fresh lemon zest
1 large egg
1 large egg yolk
1 tablespoons of honey
2 tablespoons of poppy seeds
For the glaze portion of this recipe:
1 cup powdered sugar
1 tablespoons of fresh lemon juice
To start off this recipe, preheat the oven to 350 degree F. and line two baking sheets with parchment paper then start mixing your dry ingredients. In a medium bowl, whisk together the flour, baking powder, cornstarch, and salt. After this, beat the butter, sugar, and lemon zest with an electric mixer until light and fluffy, then beat the egg, egg yolk and honey with adding the lemon juice and poppy seeds to the mixture slowly. Once the liquids have been incorporated, add your dry ingredients slowly until just combined.
Divide your mixture into 1 ½ tablespoon-sized balls while pressing the middle of the ball down lightly to create a more flat shape. Add these balls to your oven and cook for about 12- 14 minutes and allow to cool for two minutes before transferring them to a wire rack.
For your glaze, combine the powdered sugar and lemon juice into a small bowl until the mixture becomes a thick glaze. Dip each cookie in the glaze and sprinkle with more lemon zest and poppy seeds for a garnish and enjoy!
