Late Summer Gazpacho

Late Summer Gazpacho

Summer is not over yet! Seize the sunshine with this refreshing rendition of my favorite recipe in the High Vibrational Beauty book by the founders of CAP BEAUTY. I tweaked the recipe a bit to feature the Persimmon Vinegar by Flamingo Estate, just in to our clean kitchen collection! 

 

Ingredients:

3 lbs tomatoes

2 cucumbers

1 serrano pepper 

3 cloves garlic

2 tablespoons Flamingo Estate Olive Oil

2 tablespoons Persimmon Vinegar by Flamingo Estate Olive Oil 

1 tablespoon salt

1 tablespoon spanish paprika 

2-3 sprigs of dill 

1 avocado, pitted

 

How to make: the best part about this... just blend it all up baby! Chill for 30 min. Serve with sliced cucumber or avocado, a little basil and sea salt. Save in a mason jar for later!
