White Bean & Leek Soup
INGREDIENTS (serves 4):
- 2 large leeks
- 2 large zucchinis
- 1 large yellow onion
- Graza Sizzle & Drizzle olive oil
- 4 large garlic cloves, minced
- 300ml vegetable broth
- 100ml white wine
- 1 sprig rosemary
- 1 lemon
- 3 tbsp nutritional yeast
- 2 x 400g cans white beans, drained & rinsed
- sea salt & freshly ground black pepper
- to serve: french bread
METHOD:
Let’s make a nourishing White Bean & Leek Soup together. This recipe is simple and features seasonal ingredients you can find at your local farmers market. It also pairs with French bread and de soi’s non alcoholic sparkling golden hour elixir. Once you have your veggies chopped, heat about 2 tbsp of graza sizzle olive oil over the stove and add your garlic, onion and zucchini. You’ll add the broth a little at a time, then white wine, rosemary and let simmer. 5-6 min. Great moment for some de soi sips. Then add leeks, white beans I like cannellini beans and cook until leeks are soft. You can serve as is, with a good crack of pepper. Or sometimes I love to blend it all together and a loving drizzle of graza drizzle olive oil, a squeeze of lemon, lemon zest, and salt to taste. Please dig in with that french bread and serve in Earthen ceramic bowls.
